Family-run Gourmet Pizzeria and Osteria, Pizzicotto have introduced a healthier pizza option to their menu. The ‘Boccanegra’ pizza features a new activated charcoal flour concept that pushes the boundaries and enhances flavour and variety by utilising the best easy-on-the-waistline ingredients.

Gone are the worries of bloating and sluggish aftermaths, as the activated charcoal flour results in a much lighter dough which has been suggested to aid digestion. As one of the world’s oldest detoxifying remedies, activated charcoal is also proven to absorb toxins in the body, and lower cholesterol.

The award-winning concept was introduced by owner Andrea Serricchio who says that the activated charcoal dough provides ‘a visually stunning base for ingredients, as well as a slightly smoky flavour and many health benefits.’ The Boccanegra is inspired by Serricchio’s hometown, and renowned composer Giuseppe Verdi’s three-act opera ‘Simon Boccanegra’. The compelling opera tells the tale of a man who is both a leader and an outsider – in a league of his own. The perfectly matched pizza toppings of Fior di latte, spicy, N’duja, basil salsa and burrata cheese suggest that the Boccanegra is also set to lead the way and stand out from the pizza crowd.

As a slow food restaurant that prides itself in serving authentic Italian food with a gourmet twist, Pizzicotto also regularly experiments with other alternative doughs including asparagus, and beetroot. Even the most simple of dough bases are made with unrefined stone ground flour sourced from the Apennine Mountains and are proved for a full 72 hours to ensure a light yet refined base.

With a menu that celebrates ‘alla brace’ (cooking over embers), diners at Pizzicotto can also expect to enjoy delicious fresh bread, rich meat and fish dishes, and fresh handmade pasta made daily.
