Seafood lovers and rosé appreciators rejoice,
This summer, Aster will introduce crayfish and Provencal rosé pairings designed to draw upon cultural background. Executive Chef, Helena Puolakka, has created a number of Nordic-inspired crayfish dishes using classic French techniques, to be featured in a series of one-off crayfish and rosé pairing brunches, feasting dinners and masterclasses.
Hailing from the south-west coast of Finland where crayfish is traditionally harvested in August, Helena wanted to bring the summertime Finnish crayfish tradition to London. The mild white shellfish complements the delicate white fruit aromas of the rosé perfectly, which will be perfect for sunny days spent on Aster’s terrace or inside the chic restaurant.
A number of pairing events will be available, including crayfish masterclasses where guests will learn how to prepare, season and cook crayfish, finishing in a tasting paired with rosé, and brunches every Saturday, with specially curated crayfish dishes, a bottomless rosé option and a guest DJ.
On 31st August, Aster will further hone in on Nordic heritage by putting on a kräftpremiär (otherwise known as a crayfish feasting dinner). Traditionally held during August due to crayfish harvesting in Sweden being legally limited to late summer, a plethora of dill-infused crayfish dishes are enjoyed alfresco under the light of paper lanterns, with paper hats and bibs on hand.
Aster will host their banquet on the terrace – diners will be served a dozen Wiltshire crayfish with dill and sourdough, and copious glasses of Cote de Provence Rosé, followed by either creamed girolles, crispy pancetta and poached hen egg on brioche; hot smoked arctic char, pickled cucumber, with lace potato and prawn velouté or rump of lamb with provençale vegetables and lemon thyme jus. To finish, dessert will be on offer in the form of blueberry crème fraiche tart; Nordic mess or Aster’s signature dessert, The Marshall: rhubarb sorbet, Aquavit.
