As far as great tasting menus go, Aster’s latest six-course addition is pretty special.
The ‘Taste of Aster’ menu has launched in partnership with Laurent Perrier. Created by Executive Chef Helena Puolakka, the menu is both inspired by the world’s greatest kitchens and the chefs she has learnt from – including Gordon Ramsay, Pierre Koffman and Olivier Mourellon.
Combining bold flavours from Norway with authentic rustic cooking techniques from France, diners are taken on an exciting journey.
The menu starts with a Gordon Ramsay-inspired of scallop carpaccio with a sea buckthorn curd and lemon juniper dressing. Followed by a well-balanced and truly Parisian potato mousseline with smoked vendace, bleak roe and dill oil inspired by Pierre Gagnaire.
The following three courses are inspired by Helena’s time with Pierre Koffman: foie gras poached in port with tender swede, baby spinach and a fennel melba, var confit salmon with green apple, anchovy and crispy kale, and roast Anjou pigeon with turnips, January king cabbage and a vin jaune sauce.
The final course embodies the Aster brand. Inspired by ex-pastry chef at Aster, Olivier Mourellon, and Nordic flavours, a complex and intricate dish of spiced beetroot sponge with a chocolate ganache and smoked beetroot sorbet really ties it all together.
The six-course tasting menu can also be enjoyed with a Laurent-Perrier Champagne pairing. Guests can choose from NV Laurent-Perrier Brut Rose, NV Laurent-Perrier Harmony Demi-Sec, and NV Laurent-Perrier Ultra Brut.
